Summer has come and with it the barbecue season. If you enjoy spending sociable barbecues with your family and friends, you’ve come to the right place! The grilled meat should be served with a side dish, and nothing is better for this purpose than a fresh salad! In this post we present a fantastic recipe for Schopska salad. This specialty from the Bulgarian cuisine is made from cucumbers, tomatoes, onions, olives, parsley and of course traditional Bulgarian sheep cheese. This is probably famous all over Europe for its taste and properties. The salad is simple but really tasty – try the recipe yourself to see for yourself!
Schopska salad: a traditional salad from Bulgarian cuisine
Would you like to prepare a light summer salad? Then Schopska Salat might be the right choice for you! The word “schopska” shows that the dish originally comes from the area around Sofia – the capital of Bulgaria. “Schop” is the Bulgarian name for a person who lives in this region. And what is typical for the Schopska salad? As already mentioned, the recipe is particularly simple – the dish can be prepared with your eyes closed and you don’t need a lot of ingredients. Still, the salad is incredibly delicious. It can not only be served as an accompaniment to meat dishes or starters, but can also replace an entire main meal – for example if you are on a diet. Schopska salad is a good idea for parties or simply to add some variety to your menu.
The salad is prepared in different ways in different areas of Bulgaria. For example, you can add peppers – both fresh red, yellow or green peppers, as well as those from the jar. If you like to eat garlic, you can use it to season the salad. Mix together some pressed garlic with oil and vinegar and the result is a wonderful vinaigrette! And if you also add some chopped parsley, the salad will be simply irresistible! However, garlic is not part of the traditional Bulgarian salad recipe, so you won’t find it in the list of ingredients below. Hopefully you like the classic recipe from Bulgarian cuisine!
For 2 servings you need the following ingredients:
- 2 large ripe tomatoes
- 10 black olives
- 150 – 200g Bulgarian sheep cheese
- 2 green peppers – fresh or straight from the jar
- 1 onion
- 2 pinches of salt
- 1 cucumber
- 2 tbsp olive oil
- 1 tbsp apple cider vinegar
- fresh parsley, chopped – for sprinkling
We recommend that you prepare the salad with sheep cheese – if possible from Bulgaria, in order to enjoy the original taste. Feta cheese can also be used as a substitute. You can also use red salad onions and replace the olive oil with cooking oil.
Prepare the salad
First, you should peel the onion and cut it into rings. Put this with the salt in a salad bowl and press the onion rings lightly with your fingers. Next wash the tomatoes and cucumber under running water. Clean the tomatoes and cut them into bite-sized pieces. Then you should peel the cucumber and chop it up in the same way. Add this to the onion in the bowl.
Next you should wash, clean and core the peppers. Cut the peppers into fine strips. If you use them from the glass, you only need to crush them. Add this to the rest of the ingredients in the bowl. Mix the olive oil with the vinegar in another container and season the salad with this dressing. Then stir them well and add a little salt to taste if necessary.
Divide the salad on two plates and grate or crumble the cheese on top. Garnish with black olives and chopped parsley. Bon Appetit!
