Ice cream recipe – easy, quick and homemade!

Have you ever thought about how to make ice cream yourself at home? The warm summer and the long days are a good reason to try at least one ice cream recipe. But after that you will hardly be able to stop, because everyone in your family will be delighted by the delicious and refreshing taste. And homemade ice cream has another important advantage: you always know exactly what it contains. In the following we offer you a tempting and light ice cream recipe. We are sure you will not have patience to try this out at the first opportunity!
Ice cream recipe with pistachios and mint
The preparation for this refreshing, homemade mint ice cream with chocolate chips and crunchy nuts will take you about 25 minutes. The actual preparation only takes 10 minutes.
Required ingredients for 1kg:
- 6 large egg yolks
- 2 SL sugar
- 2 cups of milk
- 1 and 1/4 creamy coconut milk or cream
- 1/2 cup honey (or sugar)
- 1 vanilla
- 2 cups of fresh mint leaves
- 3/4 teaspoon sea salt
- 1 teaspoon vanilla extract
- 3/4 cup roasted pistachios, peeled
- 1 cup (or a little more) chocolate pieces, roughly chopped
- 1/3 cup roasted pistachios, roughly chopped (if desired)
Ice cream recipe – a delicious and refreshing temptation
The preparation:
1. Put the milk, 3/4 of the coconut milk, honey, vanilla and mint in a medium saucepan. Put the mixture on the stove on medium setting and let it boil. Be careful not to let the milk boil. When the mixture is hot enough, remove it from the stove and cover the pan. Let rest for about 30 minutes to an hour so that the mint can release its aroma.
2. Put the 3/4 cup pistachios and the rest of the coconut milk (or cream) in the blender or kitchen robot and puree until the mixture is completely creamy – about 5 minutes. Set aside.
3. Sieve the milk.
4. In a medium bowl, beat the egg yolks with 2 SL of sugar until the mixture turns white. Put the mint milk on the stove and as soon as it starts to boil, take it down. Very carefully add about 1/3 cup of the hot milk to the egg mixture and stir continuously. Then pour this mixture back into the milk in the saucepan and stir again continuously. Put back on the stove on a low level until the mixture thickens – about 5 minutes.

5. Take a colander and an ovenproof bowl and strain the custard.
6. Mix this with the pistachio-milk mixture, salt and vanilla and wait 10 minutes.
7. Cover the bowl with kitchen wrap and place in the refrigerator for 4 hours or all night. The mixture should be stirred as often as possible. If it is necessary and you want things to go a little faster, put the custard in the freezer for 1 to 2 hours. Have someone stir the mixture every 30 minutes to avoid uneven freezing.
8. After the mixture has been cooled well, it is frozen in an ice maker according to the instructions for use. In the last 5 minutes add the finely chopped pistachios and chocolate pieces. Transfer the ice to an airtight container. Freeze for 4 to 6 hours before serving.
