For this recipe you will need the following ingredients:

For the minced meat:

  • Minced meat (half beef, half pork)
  • 1 onion, finely chopped
  • 3 cloves of garlic, finely chopped
  • 2 medium-sized eggs
  • 1 cup of breadcrumbs and a dash of milk
  • 2 teaspoons of dry cumin, sage, rosemary, thyme
  • 1 teaspoon cayenne pepper
  • Grated peel of an untreated organic lemon
  • salt and pepper

For the filling:

  • 4 medium-sized boiled and peeled eggs
  • 2-3 carrots, cooked and cut into strips
  • 5-6 pickles, cut into strips
  • 200 g sauteed mushrooms
  • 100 g smoked mozzarella, grated
  • 100 g smoked ham, diced

For the sauce:

  • 1 cup of tomato puree
  • 3 teaspoons of mustard
  • 1 tbsp soy sauce
  • 3 tbsp brown sugar
  • 1 teaspoon cayenne pepper, garlic powder
  • 1 tbsp cumin
  • 1/2 teaspoon of allspice
  • Salt and pepper to taste

How to prepare the wrong bunny correctly:

To start with, organize all the ingredients for the mince, filling and sauce on the worktop. Soak the breadcrumbs in a little milk. In a large bowl, mix the mince well with the onions, garlic, eggs, soaked bread and spices. Put aside.

Next, prepare each ingredient for the filling. Boil and peel the eggs, leave whole. Boil and cut carrots. Fry the mushrooms in a little olive oil. Cut the pickles, grate the mozzarella, dice the ham.

Preheat the oven to 180 degrees lower and upper heat. Place the mince on a large piece of baking paper and divide it into a rectangle with an even thickness of approx. 1 cm. Layer the filling in the middle along the longer side of the rectangle. Roll up the meatloaf using the baking paper and shape into a tree trunk. Seal all possible holes and seams. Carefully place in a greased baking pan.

Bake on the bottom shelf of the oven for about 40 minutes. In the meantime, put all the ingredients for the sauce in a saucepan, mix well and simmer over low heat for about 10 minutes. Take the meatloaf out of the oven, pour the sauce over it and let it caramelize for another 10 minutes. Let rest for 10 minutes before cutting. Bon Appetit!
