As soon as the euphoria about the preparation of Christmas dinner is over, the next comes – the New Year’s Eve menu! Especially when you have invited guests, you want to prepare particularly well and work hard. But what should be on the table? We would like to suggest some recipe ideas for you to prepare a full New Year’s Eve menu and enjoy it with your favorite people. We give ideas for starters and desserts, but of course these are not a must, they can only serve as suggestions.
Arrange a beautiful festive table full of tasty food
New Year’s Eve menu – two ideas for a starter
A fine soup is recommended as a starter for New Year’s Eve, but this is of course not required. Alternatively, you can prepare exclusive appetizers and treat yourself to something special on the last evening of the year. We suggest – pumpkin soup or spicy cheese rolls!
Pumpkin soup with ginger and coconut milk
The ingredients for 6 servings:
- 800 g Hokkaido, weighed cleaned
- 1 onion
- 600 g carrots, peeled and weighed
- 2 tbsp butter
- 5 cm ginger
- 500 ml coconut milk
- 1 liter of vegetable stock
- 1 lemon, squeezed
- salt and pepper
- soy sauce
- Coriander greens for garnish
Peel and dice the pumpkin, carrots, onion and ginger and sauté in butter. Pour in the vegetable stock and cook for about 15 to 20 minutes until soft. Puree everything finely and sieve if necessary. Stir in coconut milk, season with salt, pepper, lemon juice and soy sauce. Heat again on the stove. Garnish with coriander leaves before serving.
Tip: If you want, you can serve the soup with small fried prawns to make them even tastier and more exotic.
Savory cheese rolls
The ingredients for a roll:
- 200 g cream cheese
- 150 g cream cheese with herbs
- 2 onions
- 50 g raw ham
- 80 g medieval Gouda
- 2 hard-boiled eggs
- 6 large slices of young Gouda (about 11 × 15)
- 1 bunch of chives
- salt and pepper
Put the cream cheese in a bowl. Finely dice ham, eggs, onions, chives and Gouda cheese and add to the cream cheese. Season the whole thing with spices and stir well. Brush the gouda slices with the mixture. Roll up from the short side, wrap tightly in aluminum foil and refrigerate for a few hours. Then remove the foil and cut into approx. 1 cm thick slices. Place on black bread thaler and serve.
Fish as the main course: sea bass with leek and lentil sauce and creamed horseradish
The ingredients required for 2 servings:
- 2 smoked sea bass fish, approx. 430 g each
- 1 cup of red lentils
- 1 leek
- 300 ml vegetable stock
- 1 tbsp butter
- 1 tbsp ketchup
- 2 tbsp horseradish
- 1 tbsp creme fraíche
- 2 teaspoons of paprika pulp
- 1 tbsp chives, cut into rolls
You can get the fish in well-stocked fish shops. It is best to use pieces that have already been filleted. Otherwise fillet the fish and carefully remove bones.
Cook the lentils in the vegetable stock for 8 to 10 minutes. Drain through a sieve and puree. Sweat the finely chopped leek in a little butter until translucent and stir into the lentil puree. Season with crème fraíche, ketchup and paprika pulp.
Briefly heat the fish fillets in the oven and serve with the lentil puree and the horseradish. Serve with chives rolls scattered on top.
If you don’t like fish, you can prepare delicious deer goulash, beef ragout or stuffed pumpkin the Mexican way as a main course.
Mascarpone raspberry quark as a New Year’s Eve dessert
To prepare 6 servings you will need:
- 200 g whipped cream
- 2 cups of natural yoghurt, 150 g each
- 250 g mascarpone
- 500 g frozen raspberries, not defrosted
- 500 g low-fat quark
- 200 g of sugar
Mix the mascarpone, yoghurt, quark and sugar well with the hand mixer and fold in the whipped cream.
Now distribute the mixture and the frozen raspberries in rows in glass bowls or glasses. Then put them in the refrigerator for at least 3 hours. You can garnish with chocolate sprinkles before serving.
